1 c Diet chocolate soda; chilled

1/2 md Banana; peeled

1 pk Diet choc. shake mix (WW or Alba)

1 tb Smooth peanut butter; frozen

Into each of 4 sections of ice cube tray pour 2 Tblsps soda (sections should be about 2/3 full); freeze till cubes are solid. Wrap banana in plastic freezer wrap freeze till solid. In blender combine remaining 1/2 cup soda, frozen banana half, dairy drink mix, and peanut butter, and process at high speed till smooth, scraping down sides of container as necessary. Add soda cubes, 1 at a time, processing after each addition till ice is dissolved (mixture will be thick). Serve immediately. Makes one serving: 1 P, 1 Fa, 1 Fr, 1 M, 2 opt. cals. Variation: Omit peanut butter and lose 1P and 1 Fa NOTE: Both these recipes were adapted from “Weight Watchers Family Recipes.” I say “adapted,” ’cause I prefer to eat my frozen banana without a stick in it !

2 tb Lime juice

1 tb Sugar, instant dissolving; fruit/berry sugar -OR- -icing sugar

If using fruits with seeds, remove the seeds first; other fruits may be combined in the blender, poured over ice and enjoyed. Some of the most delicious frescos are made with mulberry, soursop, papaya and starfruit, but they can also be made with peaches or strawberries – or with home grown canteloupe. After pureeing, you can adjust the sweetness to taste. Peel and seed melon, chop coarsely. In blender, puree melon, water, lime juice and sugar until frothy and smooth. Divide among 4 glasses, adding ice if desired. Serve immediately. SERVES: 4 SOURCE: Canadian Living, September 1993.

4 Ripe mangos

1/3 c Curacao or other orange flavored cordial

3 tb Fresh lime juice

3 tb Sugar

2 Bottles sarkling white wine, chilled

Lime wedges for garnish

Note – Before buying the mangoes, sniff them: they should have a pleasant, sweet aroma. For the bubbles, choose a not-too-sweet sparkling wine, such as a French cremant de Bourgogne or an Italian prosecco. For a nonalcoholic cocktail, mix with ginger ale. Hold a mango stem-end up and slice flesh away from the long flat stone in long, vertical sections. Slice the flesh from the skin. Repeat these steps with the remaining mangoes. Cut 12 thin, uniform slices for garnish and set them aside. Press the remaining mango slices through a strainer into a bowl. (You should have 1 1/2 cups mango puree.) Stir in curacao, lime juice and sugar. (The mango puree and garnish can be prepared up to 8 hours ahead and stored in spearate covered containers in the refrigerator). Pour about 2 Tbsp. mango puree into a glass, top with sparkling wine, garnish with a lime wedge and a mango slice and serve.
